As I type this, it's raining. Half of the lights are off, and it's dim in here. I'm lying on my new couch, it's so comfortable - it's part couch, part chaise lounge, and so now I can lay down and face the television. Which is playing Walk the Line, because I like the background music. Brandy and Dollar are sleeping comfortably on the couch, one at my feet and the other on my right. My oversized sweater and cup of honey and vanilla chamomile tea give me a lovely cozy feeling. And once I put the laptop down, I'll pick up the Kindle Fire and begin chapter 2 of "The Cider House Rules." Now, if you can imagine all of that, then you can understand why I am writing this post about warm and hearty entrees. It's just that kind of day. There are no new recipes here, but I'm reposting others that I've been planning on remaking just because I love them so much. Trust me, I have a page full of scribbled recipe ideas that scream FALL and COZY and HEARTY, because those are my favorite kinds of dishes to eat. But I can only make so many at a time, so you can nosh on these favorites while I craft some soups, casseroles, one pot meals and hearty dishes that you're sure to love as the temperatures drop.

The Best Ever Scalloped Potatoes
I can't tell you how many times I've made these cheesy potatoes. We've even eaten it by itself for dinner before, it's THAT good. While it makes a lot, plan for a party or enjoy the leftovers the next day. Chicken broth, milk, butter, cheese, potatoes, salt and pepper. Mmmm good.
Roasted Whole Chicken and Potatoes
Whole chickens are incredibly easy to roast. They remind me of a mini-Thanksgiving each time I make one. Affordable, moist and tender, this chicken is perfect for a weeknight OR weekend meal.
One of my pet peeves is differentiating Shepherd's Pie with Cottage Pie. Shepherd's Pie has ground lamb in it, and so if you see a "Shepherd's Pie" that is beef and not lamb, then technically it's not Shepherd's Pie, it's Cottage Pie. Regardless of the name, it is deeeelicious. The potatoes create a great crust that you break through to get to the carrots, peas and beef.
Creamy rice with bacon, peas and parmesan? Yes please! Risotto takes effort and time, but it's 100% worth it. This is stick-to-your-ribs good.
